Skid Row 1,000-Plate Saturday - The Big Count
Skid Row holds one of the largest street populations in the United States, a few square blocks where tens of thousands of nights are slept on pavement. It is where Mr Tang's jiangxiang bing cart is most needed and most expected; the queue there starts forming before the griddle is even hot. This Saturday we attempt the kitchen's biggest single day yet: one thousand hot plates served between dawn and dark. The arithmetic of a thousand plates is unforgiving: roughly 100 kg of flour, a thousand eggs, four gas cylinders, three volunteer spades on the griddle and eleven hours of standing. Each £10 entry funds twenty of those plates. Fifty of us fund a hundred plates each; five hundred of us fund the entire mountain. The session itself runs alongside the count, live: a big-screen tracker climbing towards 1,000, check-ins from the cart every hour, the moment we cross each hundred, and - if the queue allows - the last plate of the day handed over on camera at dusk. One thousand plates is not a solution to Skid Row. It is a thousand people who ate today. Count with us.
