Thanksgiving Weekend Street Feast
Thanksgiving is America's table, and the promise of the holiday is that nobody eats alone. Mr Tang's kitchen takes that promise literally: on Thanksgiving weekend the cart becomes a long table - turkey carved on the flat-top, gravy from the griddle drippings, trays of sides from the volunteer kitchens, and jianbing folded around leftover turkey for the signature dish of the street: the Tangsgiving roll. This is the most expensive single day of the kitchen's year: birds, sides, serving kit, rental tables, and eleven hours of griddle gas. Each £10 entry funds a full Thanksgiving plate for one person - turkey, sides, a Tangsgiving roll and something hot to drink - with the target set at 300 plates and every plate served seated, at a table, like a guest and not a queue. At Saturday's session we carve the first bird on camera, share the story of the family of six who spent last Thanksgiving at this table after losing their apartment, and read the gratitude notes left on the tablecloth last year - the ones the volunteers kept. Everyone at a table. Everyone fed. That is the whole holiday. Help set it.
